If you did get a chance to make this weeks class, don’t worry, we have you covered with the egg bite recipe! If you’re into meal prepping or just want to have a quick grab and go breakfast, these will not disappoint! (yes! these are kid friendly!)
Ingredients
8 Eggs
2/3 cupCottage cheese
1/2 teaspoon "White Lightning”.. Or your favorite seasoning 🙂
1&1/2 cups Cheese (we used a combo of Swiss and Gruyere)
6 slices Bacon
8 x 4 ounce mason jars with lids (Amazon Listing)
Instructions
- Cook the bacon in the oven until crisp, drain and set aside (275 for ~25 minutes.. Put bacon in cold oven)
- Set the Sous Vide to 172 degrees and preheat the bath
- Mix 8 eggs,2/3 cup cottage cheese, 1&1/2 cups cheese, and 1/2 teaspoon" White Lightning” in a blender or immersion blender
- “Grease” the sides and bottom of each jar with duck fat, cooking oil, or butter.
- Place 1/2 slice bacon in the bottom of each jar
- Pour into the jars the egg mixture to fill each one aproximently 2/3”s to 3/4’s full
- Screw on the lids just finger tight (do not over-tighten this leaves some room for expansion)
- Using tongs lower each jar into the bath and set timer for 90 Minutes.
- When done remove the jars with tongs and allow them to cool slightly.
- When ready unscrew the lid and run a butter knife around the inside of the jar to loosen the egg bite and flip over onto a plate. (Or you can eat them directly from the jar
These egg bites will store in your fridge for weeks if unopened. To reheat place in microwave (remove the lid) for +or- 30 seconds
Or reheat in the sous vide @ 140 degrees for 20 minutes
This is just one way to make sous vide egg bites . We challenge you to experiment with different ingredients…….jalapeno,bell pepper, sausage, or onions. Be creative and have fun!
