Boil Method:

Ingredients: 

  • 1 to 2 live lobsters (about 1.5 pounds each)
  • 3 ½ quarts of water per 1.5 lb lobster
  • 1/2 cup sea salt

Fill your large pot with about 4 gallons of water. This should be enough to completely submerge the lobsters. Add the sea salt to the water. Bring the water to a rolling boil over high heat. Once the water comes to a boil, place your lobster, headfirst, into the boiling water.  Bring the water to a rolling simmer and boil for 12-15 minutes. Once your timer is up, remove your lobster and let it rest for a couple minutes. You can use an instant read thermometer to check for an internal temp of 140F. **If your lobsters are bigger, add 1 minute of cooking time for each quarter pound.** 

 

Grilled Lobster Tails: 

 

Ingredients:

  • Lobster Tails; Shell on; 5-8 oz
  • 1 stick of butter per 3 Lobster tails
  • Kosmos Honey Chipotle Killer Bee 
  • Lemon Wedges

 

First, lay your lobster tails onto your cutting board with the top of the shell facing up. With a pair of kitchen sheers, cut a box shape in the top of the tail so that the tail meat is exposed. Get your grill to a medium heat (350-375F) and add your butter and seasoning to a small pot and melt your butter, once melted, remove from heat and set next to your grill. Place your lobster flesh side down for the first 4 minutes of cooking, then you’ll flip the tails and start brushing your seasoned butter onto the tails. Repeat this every minute for the next 4 - 5 minutes. Watch out for flare ups on your grill when brushing butter onto your tails.  Using an instant read thermometer, check for 140 internal temperature. Squeeze some fresh lemon juice and enjoy!

 

 

Hot Lobster Roll:

 

Ingredients: 

  • Hot Butter
  • Noble Bread New England Rolls
  • Chives or chopped Parsley for Garnish
  • Cooked Lobster
  • Lemon Wedges

 

This is a simple and straightforward recipe for a delicious lobster roll! Simply slice your rolls from the top and go about halfway through the bun. Toss your hot lobster into a small pan with some hot butter. Add your buttery lobster into your roll and add some chives or parsley over the top! Keep a small amount of butter on the side to dip your roll into while enjoying your roll! 

 

Cold Lobster Roll: 

 

Ingredients:

  • Duke’s Mayo 
  • 2 Celery stalks; Small Dice
  • ½ Red onion; Small Dice
  • Loot N’ Booty El Jefe Grande or Heath Riles Cajun Creole Garlic Butter
  • Lemon Wedges
  • Cold Lobster Meat
  • Noble Bread New England Rolls
  • Chives or chopped parsley

 

Slice your roll from the top and go about halfway through the bun. In small bowl, mix your mayo, celery, red onion, seasoning of your choice, and some lemon juice. Once that is mixed together, toss your cold lobster meat into your mayo mixture and evenly coat all your lobster meat. Scoop your lobster mixture onto your rolls and top with chives or parsley!
