Holiday Dessert Class
Smoked Chocolate Chip Cookies:
Ingredients:
1 Container Toll House Cookie Dough
Instructions:
1. Preheat your pellet smoker to 325 degrees.
2. Take a baking sheet and line it with parchment paper.
3. Form your cookie dough into 2 oz balls and place them onto your lined baking sheet.
4. Cook for 12 minutes and let them sit for 2 minutes on the baking sheet once done cooking.
5. After 2 minutes, remove your cookies and enjoy!
Smoked Pecan Pie:
Ingredients:
Pie Crust - Unbaked
3 Eggs, Beaten
1 Cup Light Corn Syrup
2 tbsp Melted Butter
1 Cup Light Brown Sugar
1 tsp vanilla extract
1 1/2 cups chopped or halved pecans (we used halved in class)
Instructions:
1. Preheat your pellet smoker to 350 degrees
2. Combine your eggs, corn syrup, butter, sugar and vanilla in a large bowl and mix together.
3. Stir in your pecans once you've mixed step 2 together.
4. Pour your mixture into your pie crust.
5. Place pie on your smoker for 1 hour before checking. After 1 hour, check to see if the center of your pie is slightly jiggly, if its still too loose, continue cooking until the center is jiggly. Sometimes these pies need an additional 10-15 minutes.
6. Take your pie off and let it cool completely before slicing and serving.
Smoked Apple Crisp:
Ingredients:
- Apple Filling:
8 Granny Smith Apples; cut into 1/2" slices
2 tbsp Lemon juice
1 tsp Vanilla Extract
1 Cup Light Brown Sugar
3 tbsp Corn Starch
2 tsp cinnamon
- Crisp Topping:
18 graham crackers; crushed
1/2 cup light brown sugar
1 tsp kosher salt
2 sticks unsalted butter; melted
1 tsp vanilla extract
Instructions:
1. Preheat your pellet smoker to 400 degrees
2. Toss your sliced apples with the lemon juice and vanilla extract. Then add your brown sugar, corn starch, and cinnamon. Toss again until your apples are coated.
3. Arrange your apple slices into the bottom of your pan or baking dish. Set aside.
4. Mix your crushed graham crackers with brown sugar and salt. Then add your melted butter and vanilla extract. Stir well until fully combined.
5. Add your crisp topping onto the arranged apple slices, pressing down to create an even layer on top.
6. Place your dish into your smoker and cook for 60-70 minutes, turning it halfway through the cooking time.
7. Remove once cooked, scoop some vanilla ice cream on top and enjoy!
Bananas Foster:
Ingredients:
1/4 Cup of Butter
2/3 Cup Dark Brown Sugar
3 1/2 tbsp Rum or Creme de Banana Cocktail Mixer
1 1/2 tsp vanilla extract
1/2 tsp cinnamon
3 bananas, peeled and sliced
1/4 Cup Chopped Walnuts
Vanilla ice cream
Instructions:
1. Gather all your ingredients and have everything measured and staged before starting. This is a quick recipe, and you can over cook it if you're not prepared.
2.Melt your butter in a large skillet over medium heat, stir in brown sugar, rum, vanilla, and cinnamon. Bring to a low simmer.
3. Place bananas and walnuts in the pan. Cook until the bananas have softened then remove from heat. Bananas should take 1-2 minutes.
4. Scoop your banana filling into a bowl and top it with vanilla ice cream and enjoy!
Banana Pudding
Ingredients:
2 packages of instant vanilla pudding mix
2 cups of milk
1 can Eagle Brand Sweetened condensed milk
1 Small container of cool whip
4 large bananas
1 box of vanilla wafers
Instructions:
1. Mix pudding and both milks and beat together for a few minutes. Chill for 5 minutes in the fridge.
2. Fold your cool whip into your pudding mixture.
3. Place pudding mix in the bottom of a pan and add a layer of vanilla wafers and sliced bananas. Continue alternating layers, ending with a pudding as the top layer. Refrigerate for 6 hours before serving.
